My daughter decided the very first thing she would make from Joy the Baker Homemade Decadence Cookbook was -Yeasted Overnight Pancakes-. She made a few substitutions for our way of eating like using almond milk instead of whole milk, Einkorn flour to replace flour, some whole unbleached sugar & yacon syrup to replace the sugar, natural unrefined salt, etc. The next morning she got up early to unwrap them & let them get to room temp so she could cook breakfast for her 5 siblings, she is 14 & so that is a feat in itself. My other kids liked the pancakes so much most ate them without syrup saying they were amazing, they either used butter or coconut oil on them & just ate. I did use syrup but not much was needed & they were very yumm!
